Based on the recipe from Paleo Grubs
Ingredients
1 head of cauliflower
½ Vidalia onion
3 cloves of garlic
1 tbsp coconut oil
salt and pepper, to taste
This recipe makes 2-3 servings, depending on the size of your cauliflower.
Instructions
Clean the cauliflower and cut into large chunks. Using a grater or a good processor, grate the cauliflower until it resembles rice.
Dice the garlic and onions in the amount and to size you prefer.
Add coconut oil to a pan over medium heat. Saute the onion and garlic until slightly browned, and the onions are a bit translucent.
Add in grated cauliflower, salt, and pepper and stir until heated.
