Welcome to my blog.  As with so many in today’s world, I wanted a place to record my efforts and thoughts, as well as a way to share some of my discoveries.  Just so’s you know, however, it doesn’t mean that everything here is something I feel the world needs or wants to know.  Some of it is just for me, but you’re welcome to take a peek.

Quick tips to start the week

Preparing foods ahead of time can save a lot of hassle when it’s go time for meals. Here are some things to do at the beginning of the week to give you quick grab and go solutions.

  • Prepare batches of your favorite paleo sauces such as mayonnaise, ketchup and barbecue sauce.
  • Boil some eggs
  • Grill some chicken, with or without seasonings. Decide what you’ll be using it for. Seasoned chicken is great on salads. Diced chicken in a stir fry may need to be less seasoned to take on the flavors of the whole dish.
  • Brown some ground beef. If you know you eat a lot of tacos, go ahead and season it. Otherwise, you can add it to your meals with the seasonings and let it simmer for a bit later.
  • Dice some onions
  • Slice up some veggies. Handy snacks is a must, and these can be time consuming when throwing together lunches or trying to pull together a quick meal. Veggies I like to have on hand: Carrot sticks, Sweet peppers, Celery, and Cucumbers.
  • Roast some veggies. These are great to throw in a hash, or stuffing, or just heat up to go with a meal. You may wish to roast them in separate pans, unless you know you’ll want them mixed up later.
    • Sweet potatoes
    • Winter squash
    • Summer squash
    • Broccoli
    • Cauliflower
    • Carrots
  • Make a few side dishes. Coleslaw is easy to make ahead, and tastes better when the flavors have had a chance to meld a little.
