Some years back, I found a recipe in a Heart Healthy cookbook called Healthy Joes. We’ve found our own seasonings and have eliminated pre-made condiments. Here’s what we get.

Ingredients
- 2 cups of chopped vegetables, any combination. For example:
- – kale
- – onion
- – red sweet pepper
- – zucchini (shredded)
- – carrots (shredded)
- 2 Tbsp olive oil
- 3/4 lb. Ground beef
- 15 oz can tomato sauce
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic
- 1/2 tsp salt
- 1/4 tsp pepper
- Whole wheat hamburger buns
Directions
Chop the vegetables. Heat a pan with the olive oil. Sautee the vegetables for about 5 minutes. Remove from the pan, and add the ground beef. Once the beef is browned, add the tomato sauce and seasonings. Mix well. Stir in the sauteed vegetables, and simmer about 5 minutes. You can serve the meat mixture on a bun, in a lettuce wrap, or in a bowl. Whatever you like best.
