Sloppy Joes (a.k.a. Healthy Joes)

Some years back, I found a recipe in a Heart Healthy cookbook called Healthy Joes. We’ve found our own seasonings and have eliminated pre-made condiments. Here’s what we get.

Ingredients

  • 2 cups of chopped vegetables, any combination. For example:
  • – kale
  • – onion
  • – red sweet pepper
  • – zucchini (shredded)
  • – carrots (shredded)
  •  
  • 2 Tbsp olive oil
  • 3/4 lb. Ground beef
  • 15 oz can tomato sauce
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Whole wheat hamburger buns

Directions

Chop the vegetables. Heat a pan with the olive oil. Sautee the vegetables for about 5 minutes. Remove from the pan, and add the ground beef. Once the beef is browned, add the tomato sauce and seasonings. Mix well. Stir in the sauteed vegetables, and simmer about 5 minutes. You can serve the meat mixture on a bun, in a lettuce wrap, or in a bowl. Whatever you like best.
