Ingredients
1/2 – whole sliced cucumber
1 large hard boiled egg
1/2 small avocado
vinaigrette dressing or juice from a lemon
6-10 cherry tomatoes (optional)
Slice the eggs, cucumber, and avocado so that the size of the pieces is similar enough to mix nicely. Drizzle with a vinaigrette or squeeze some lemon juice on it. This is more of a mixed salad like a green salad, than a blended salad like a traditional egg salad.
Optionally, slice the cherry tomatoes in half and add them in, or eat them on the side.
